Babits Tokaji Szamorodni Sweet, made of Furmint & Harslevelu. This wine represents everything about traditional Tokaji specialty dessert wines. Thus, the colours of the golden sunshine and the taste of the volcanic terroir locked in a bottle. For centuries Tokaji Szamorodni has been the most popular Tokaji wine. It owes both its name and its popularity to the polish people.
Szamorodni translates to “as it has grown”. It means that harvest takes place when botrytis cinerea starts to appear on the bunches of grapes. Once they harvest the whole bunches, they process them as they are. I.e. there are both botritised aszu berries and healthy grapes present together on all bunches. Of course, the more aszu berries are present in proportion to healthy berries, the sweeter the Szamorodni will be. Yet, there are still a fair amount of healthy grapes in the mix too. Therefore, it results in a lot lighter dessert wine than a Tokaji Aszu for example, which is made with 100% botritised aszu berries. The next step is barrel ageing in oak barrels.
