Ice Selection is previously known as Icecrystal of Pieroth Wines. It is made of 100% Cabernet Sauvignon. An exquisite, sweet, red dessert wine from the Hajos-Baja wine region. This is a real gem by Pieroth Wines.
Cabernet Sauvignon is one of the most widespread red wine grape varieties in the world. Cabernet Sauvignon is very popular as it is a dark, and thick skinned grape variety. It produces full bodied and intense red wines, with great ageing potentials.
Harvest for this specialty ice wine takes place at dawn in November. Always under frosty conditions of at least – 4C or less. The frozen berries are then pressed for a highly concentrated sweet and rich grape juice (called ‘must’ in Hungarian). Late harvesting in freezing conditions is how the highest concentration of natural grape sugars can be extracted from the grapes.
Such special procedure results in a stunning, extract-rich, sweet, red dessert wine with defined fragrance reminiscent of cassis. This unique ice wine shines through the glass in deep ruby red colour. Pieroth Ice Selection showcases rich and fruity notes of cherry, red berries, cranberry, and a touch of marzipan on the palate. Gentle tannins to round it all. Soft and velvety finish that follows. Unlike any other sweet red wines, Ice Selection is such an easy drink with elegance, a real delicacy after dinner.
This ice wine is recommended to serve cold, to be enjoyed on its own, or to accompany a cheese board, or light, fruity desserts.

I have known Pieroth wines for a long time, but i was reluctant to try their ice wine. I normally buy Bor Forras & Murdei, and found the ice wine a bit pricey. But now I understand why. I never appreciated the process of harvesting the grapes for ice wine under such special conditions, in sub zero. Truy remarkable & the taste is captivating.
